17 Easy Fall Breakfast Recipes (Healthy, Make Ahead, and Crowd Friendly)

Easy Fall Breakfast Recipes

I have a little rule about September.

The second it gets dark enough that I need a lamp on at 7 a.m., cereal is banished to the back of the cupboard, right next to the protein powder I bought in July with big plans for myself. 🙈

Autumn breakfast is a completely different vibe.

Warm spices, apple in everything, pumpkin in places where pumpkin arguably does not belong (I said what I said), and food that makes standing at the counter in thick socks feel like a genuine event.

Fall Breakfast Recipes

It’s the one meal of the day I’m willing to set an alarm for.

So I pulled together 17 fall breakfast recipes I actually make.

There are healthy fall breakfasts for the mornings I’m being sensible, autumn brunch recipes for the mornings I’m very much not, a good handful you can prep the night before, and one casserole that will feed a crowd without you doing anything at 8 a.m. except pressing a button on the oven.

Healthy Fall Breakfasts

These are the ones I make when I want autumn flavors without the sugar crash by 10 a.m. Vegetables sneak into several of them, and I’d rather you found that out here than mid-bite.

1. Kale and Butternut Squash Frittata

One pan, a pile of roasted squash, and enough goat cheese to make it feel like a choice you made on purpose. The kale wilts down into the eggs so you barely register that you’re eating it before 9 a.m. It also reheats beautifully, which means Sunday brunch quietly becomes Tuesday’s rescue mission.

2. Healthy Pumpkin Smoothie Bowl

For the mornings when you want pumpkin spice but you’d also like to feel like a person who owns a yoga mat. It’s thick enough to eat with a spoon, which is the entire point of a smoothie bowl, and the toppings are where you get to show off.

3. Fall Breakfast Quinoa Bowl

Quinoa for breakfast sounds like something you’d be talked into, but warm quinoa with autumn produce and a bit of maple is a genuinely lovely thing. It’s savory-adjacent without being a whole cooked meal, and it holds you until lunch in a way that toast never quite manages.

4. Breakfast Stuffed Sweet Potatoes

A baked sweet potato split open and loaded up like a jacket potato that got a personality. Bake them ahead on Sunday, then it’s a two-minute reheat and whatever toppings you have in the fridge. Very forgiving, very filling, very autumn.

5. Pumpkin Pie Protein Shake

Dessert flavors, breakfast job. This one is for the mornings when you’re leaving the house in nine minutes and still want something that tastes like the season. Blend, pour, take it with you, feel smug.

6. Healthy Apple Pie Fall Smoothie

Apple, cinnamon, and the general spirit of pie, minus the two-hour commitment. It’s a good one for using up apples that have gone slightly soft in the bowl, which, if your fruit bowl is anything like mine, is most of them by mid-October.

7. Peanut Butter Apple Toast

Not technically a recipe, and I don’t care. Thick peanut butter, thinly sliced apple, a heavy hand with the cinnamon. It’s the five-minute fall breakfast I make more than anything else on this list, and it converts anyone who claims they “don’t eat breakfast.”

Make Ahead Fall Breakfast Ideas

Everything in this section gets assembled the night before or batched on a Sunday. Dark mornings and cooking from scratch don’t mix, and these are how I get around that.

8. Carrot Cake Overnight Oats

Carrot cake is autumn’s most underrated flavor, and I will not be taking questions. These come together in a jar the night before with grated carrot, warm spice, and enough texture that it doesn’t feel like eating wallpaper paste.

9. Pumpkin Pie Overnight Oats

The make-ahead fall breakfast, honestly. Real pumpkin puree, pie spice, and a jar you assemble while you’re already in the kitchen doing something else. Make four at once on Sunday, and your weekday mornings get about eight minutes easier.

10. Apple Peanut Butter Baked Oatmeal

Baked oatmeal is the make-ahead breakfast that actually feels like a proper hot meal. Bake it once in a muffin tray and reheat a piece each morning. The peanut butter and apple combination is doing a lot of quiet work here.

11. Gluten-Free Banana Bread

Every autumn kitchen needs a loaf sitting on the counter under a tea towel. This one happens to be gluten-free, so it covers you when someone comes over and mentions their diet at the door. Toast a slice, add butter, do not apologize.

Fall Breakfast Ideas for a Crowd

For when people are staying over and you’d like to serve something hot without being awake before them. All three of these scale up and mostly cook themselves.

12. Cozy Autumn Breakfast Casserole

The one I make when people are staying over. Assemble it the night before, slide it into the oven while everyone is still doing the shuffle from bedroom to kettle, and serve something hot to eight people without having stood at a hob once.

13. Orange Shakshuka

A fall spin on shakshuka that swaps the tomatoes for butternut squash, orange bell pepper, and warm spices like thyme, cumin, and nutmeg, with eggs poached right in the pan. It serves six from one skillet and looks far more impressive than the effort involved. Crusty bread is not optional.

14. Cinnamon Apple Scones

Scones turn a breakfast into an autumn brunch menu. These are apple and cinnamon; they’re best the day they’re baked, and they give you something to put in the middle of the table so it looks like you planned things.

Cozy Weekend Brunch Recipes

The indulgent end. These take longer, involve pastry or syrup, and are entirely unsuitable for a Tuesday, which is rather the point.

15. Apple Butter Cinnamon French Toast Sticks

French toast, but in stick form, which means dipping, which means you’ll eat considerably more than you intended. Apple butter and cinnamon make this taste like an autumn fairground in the best possible way. Weekend only, for everyone’s sake.

16. Gluten-Free Apple Butter Pop Tarts (Vegan)

Homemade pop tarts sound like a project and mostly aren’t. Gluten-free, vegan, filled with apple butter, and infinitely better than the foil packet version you grew up on. Make them once and you’ll understand the appeal immediately.

The pumpkin counterpart, and the reason I’m ending this list on pastry. Buttery, spiced, glazed on top, and genuinely a fall-themed breakfast in the way people mean when they say that. Slightly dangerous to have in the house.
